Beef Salad

 

Roast beef, a palm sized portion 

1 beetroot

1 handful rocket leaves

1/2 cup goats cheese

10 hazelnuts

Chopped parsley 

Chopped dill

Apple cider vinegar

1 tablespoon of Dijon mustard

 

Method

Dice and chop all the ingredients and mix in a bowl. Dress with olive oil, cracked pepper and salt.
